This is something I've developed and I now have it down to a fine art. They're as good as any burger (of any meat) you've ever had.
Rabbit meat is lean, so it needs added fat to make moist burgers, so whatever amount by weight you have in rabbit meat (boned out), you need at add 20% of that weight in pork mince (10% fat).
I normally freeze my rabbits, so when I fancy a BBQ, I just defrost the rough amount of meat I want to start with. Remember that if its been frozen raw, it can only be frozen again once its been cooked.
So the recipe.
I make 180g burgers in a burger press and find it best to weigh out the exact amount so burgers are equal size. No point skimping on the burger size.
Even just taking the back legs and back straps, the meat needs mincing properly. More so than you'd initially think. Mince it well.
The spices and herbs as follows:
For up to 10lb of total meat, I add 1 large onion, but very finely chopped. I do mine in a food processor, but easy to do with a sharp knife.
Add,1 tsp dried thyme, 1tsp, garlic granules, 1/2 tsp ground black pepper, and salt to taste (for 10lb meat, about a teaspoon of salt).
Mix by squeezing thoroughly by hand.
Leave to rest in the fridge overnight.
Stick it on a grill over hot coals, until the burgers are firm, and you have a nice bit of colour.
Assemble the burger. This is an art and can make the difference between a crap and a great burger.
choose Brioche rolls. The sweet roll compliments the savoury flavours.
Toast the roll, only the insides.
From the bottom up add,
Sauce of your choice. I like Bullseye or Nandos Medium garlic
Add sliced gherkins or any other pickle
Add sliced Jalapenos (or not)
Add sliced fresh onion
Add a dollop of mayo
Add salad leaf of your choice. I like rocket.
Add another dollop of mayo
Add sliced tomato
Add sliced cheese. I prefer Stilton
Drop the hot burger on, fresh from the coals
Add some chutney. My money's on home made caramelised red onion chutney, with a dash or Nandos
Stick the top of the roll on.
